As Professor Dirk Bockmühl explains in the magazine “Good Health” (Issue 4/2019), the spores of the bacteria are very resistant to heat, so that they cannot be killed even the second time they are warmed up.

According to the microbiologist at Rhein-Waal University, when you take the pasta out of the fridge, you should continually heat it to 70 degrees for at least two minutes.

It is also essential to ensure that the food is placed in the refrigerator immediately after it has cooled, so that the formation of bacteria is reduced.
